Jammin' Texas Chili
 by Melissa Nixon

Ingredients
2 1/2 pounds ground beef
3 Tbsp olive oil
2 stalks celery, finely diced
2 large onions, diced
2 cloves garlic, minced
1 (29 oz) can tomato sauce
1 (28 oz) can crushed tomatoes
1 dash Worchestershire sauce
1 1/2 cups dark beer
2 (16 oz) cans chili beans, drained
1 (15 oz) can kidney beans, drained
2 Tbsp ground cumin
1/4 cup chili powder
2 tsp coriander
2 tsp cayenne pepper
2 Tbsp sugar (if needed to cut the spice)

Directions
In a large skillet over medium heat, cook beef until brown.  Drain.

In a large pot over medium heat, cook celery, onions and garlic in olive oil until onion is translucent.  Stir in beef, tomato sauce, tomatoes, beer, chili beans, kidney beans, cumin, chili powder, coriander, cayenne pepper, and Worchestershire sauce.  Simmer over low heat for 3 hours or until flavors are well-blended.

by Pat Miller

Substitute Groundhog

Substitute Groundhog will make its debut at our Fall Book Fair.  It is written by our Creech Librarian, Pat Miller, and has been named a Junior Library Guild book for January 2007.  Groundhog gets sick just before Groundhog Day and can't do his job.  He auditions for a substitute.  Get your own autographed copy to find out how a visiting armadillo from Texas saves the day!

The Creech PTA congratulates Mrs. Miller on her publishing success!!!
